  • 8 oz semi-sweet chocolate, chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
  4. Stir in boiling water until well combined. The batter will be thin.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. For the Filling: In a mixing bowl, beat the softened butter until creamy. Gradually add powdered sugar, alternating with milk and vanilla extract, and beat until smooth and fluffy.
  9. Once the cake layers are cooled, spread the filling evenly over one layer. Top with the second cake layer.
  10. For the Ganache: In a small saucepan, heat the heavy cream until it begins to simmer. Remove from heat and pour over chopped chocolate. Let sit for 1–2 minutes, then stir until smooth.
  11. Pour ganache over the top of the assembled cake, letting it drip down the sides. Smooth the top with an offset spatula.
  12. Refrigerate the cake for at least 30 minutes to set the ganache before slicing and serving.

Notes

  • You can prepare the cake layers and filling a day in advance; store them in the refrigerator and assemble the cake just before serving.
  • For a richer chocolate flavor, use dark cocoa powder in the cake batter.
