Ingredients
1 lb boneless, skinless chicken breasts
1 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
2 carrots, sliced
2 celery stalks, sliced
1 cup sweet potatoes, diced
1 tbsp fresh ginger, grated
1 tbsp ground turmeric
1 tsp ground cumin
1/2 tsp ground black pepper
6 cups chicken broth
1 cup coconut milk
2 cups baby spinach
1/4 cup fresh cilantro, chopped
Juice of 1 lemon
Salt to taste
Instructions
In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
Add the sliced carrots, celery, and diced sweet potatoes. Cook for a few minutes until they begin to soften.
Stir in the grated ginger, ground turmeric, ground cumin, and ground black pepper. Cook for another minute until fragrant.
Pour in the chicken broth and bring to a boil. Add the chicken breasts and reduce the heat to a simmer. Cook until the chicken is fully cooked, about 20 minutes.
Remove the chicken breasts, shred them, and return them to the pot.
Stir in the coconut milk and baby spinach. Cook until the spinach is wilted.
Add the fresh cilantro and lemon juice. Season with salt to taste.
