8 oz rice noodles

1 lb chicken breast, sliced thin

2 tbsp vegetable oil

1 onion, chopped

3 cloves garlic, minced

2 carrots, julienned

1 small cabbage, shredded

1 red bell pepper, sliced thin

1 cup snow peas

1/4 cup soy sauce

2 tbsp oyster sauce

1 tsp sesame oil

2 cups chicken broth

1/4 cup green onions, chopped

Lemon wedges for garnish


Instructions

Cook the rice noodles according to package instructions. Drain and set aside.

In a large skillet or wok, heat vegetable oil over medium-high heat. Add the sliced chicken breast and cook until browned and cooked through. Remove from the skillet and set aside.

In the same skillet, add the chopped onion and minced garlic. Sauté until fragrant and softened.

Add the julienned carrots, shredded cabbage, sliced red bell pepper, and snow peas. Stir-fry until the vegetables are tender-crisp.

Return the cooked chicken to the skillet. Stir in the soy sauce, oyster sauce, sesame oil, and chicken broth. Bring to a simmer.

Add the cooked rice noodles to the skillet and toss to combine with the vegetables and sauce.

Garnish with chopped green onions and serve with lemon wedges on the side.
