8 large flour tortillas

2 cups fresh spinach, chopped

2 cups mushrooms, sliced

2 cups shredded mozzarella cheese

1/2 cup chopped onion

2 cloves garlic, minced

2 tbsp olive oil

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

Cooking spray


Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.

Add the sliced mushrooms, cumin, chili powder, salt, and pepper. Cook until the mushrooms are tender and any liquid has evaporated.

Stir in the chopped spinach and cook until wilted. Remove from heat.

Place four tortillas on the prepared baking sheet. Evenly distribute the spinach and mushroom mixture over the tortillas, then sprinkle with shredded mozzarella cheese. Top with the remaining tortillas.

Lightly spray the top tortillas with cooking spray.

Bake in the preheated oven for 8-10 minutes, or until the tortillas are golden brown and the cheese is melted.

Cut into wedges and serve hot.
