Ingredients

  • Salt and pepper, to taste
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup white wine (optional)
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1/2 tsp red pepper flakes (optional)
  • 1 cup long-grain white rice
  • 2 cups chicken broth (for rice)
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat 2 tbsp olive oil in a large skillet over medium heat. Cook chicken until golden brown and cooked through, about 5–7 minutes per side. Remove and set aside.
  3. In the same skillet, add remaining 1 tbsp olive oil and minced garlic. Cook for about 30 seconds until fragrant.
  4. Pour in chicken broth, white wine (if using), lemon juice, lemon zest, parsley, and red pepper flakes. Simmer for 3–4 minutes until slightly reduced.
  5. Meanwhile, cook rice in 2 cups chicken broth until tender, about 15–18 minutes.
  6. Stir grated Parmesan cheese into the cooked rice until creamy and well combined.
  7. Return chicken to skillet and spoon sauce over the top. Let it warm through for a minute.
  8. Serve chicken scampi alongside garlic Parmesan rice. Garnish with extra parsley if desired.

  • Omit white wine and use extra chicken broth if preferred.
  • Add extra lemon juice for a brighter flavor.
