Description
Tender chicken breasts in a bright lemon-garlic sauce, served over creamy garlic Parmesan rice. A comforting and elegant dinner that’s easy enough for weeknights yet special enough for guests.

- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup white wine (optional)
- Juice of 1 lemon
- Zest of 1 lemon
- 2 tbsp fresh parsley, chopped
- 1/2 tsp red pepper flakes (optional)
- 1 cup long-grain white rice
- 2 cups chicken broth (for rice)
- 1/2 cup grated Parmesan cheese
Instructions
- Season chicken breasts with salt and pepper.
- Heat 2 tbsp olive oil in a large skillet over medium heat. Cook chicken until golden brown and cooked through, about 5–7 minutes per side. Remove and set aside.
- In the same skillet, add remaining 1 tbsp olive oil and minced garlic. Cook for about 30 seconds until fragrant.
- Pour in chicken broth, white wine (if using), lemon juice, lemon zest, parsley, and red pepper flakes. Simmer for 3–4 minutes until slightly reduced.
- Meanwhile, cook rice in 2 cups chicken broth until tender, about 15–18 minutes.
- Stir grated Parmesan cheese into the cooked rice until creamy and well combined.
- Return chicken to skillet and spoon sauce over the top. Let it warm through for a minute.
- Serve chicken scampi alongside garlic Parmesan rice. Garnish with extra parsley if desired.
Notes
- Omit white wine and use extra chicken broth if preferred.
- Add extra lemon juice for a brighter flavor.
- For extra richness, stir 1 tbsp butter into the sauce before serving.
