  • 1 jalapeño pepper, seeded and finely diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • 1 chipotle pepper in adobo sauce, minced
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine corn kernels, diced red onion, diced red bell pepper, diced jalapeño pepper, and chopped cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, minced chipotle pepper, salt, and pepper.
  3. Pour the lime dressing over the corn mixture and toss until well combined.
  4. Taste and adjust seasoning as needed. For spicier salsa, add more minced chipotle pepper.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld before serving.
