- 2 cups corn kernels (fresh or thawed frozen)
- 1/2 red onion, finely diced
- 1/2 red bell pepper, finely diced
- 1 jalapeño pepper, seeded and finely diced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 1 tablespoon olive oil
- 1 chipotle pepper in adobo sauce, minced
- Salt and pepper, to taste
Instructions
- In a large bowl, combine corn kernels, diced red onion, diced red bell pepper, diced jalapeño pepper, and chopped cilantro.
- In a small bowl, whisk together lime juice, olive oil, minced chipotle pepper, salt, and pepper.
- Pour the lime dressing over the corn mixture and toss until well combined.
- Taste and adjust seasoning as needed. For spicier salsa, add more minced chipotle pepper.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld before serving.
Notes
- Can substitute canned corn (drained and rinsed) for fresh or frozen corn
- Adjust salt levels when using canned corn as it may contain added sodium
