- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon

- 2 large eggs
- 1 cup milk
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
For Cinnamon Sugar Coating:
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 cup unsalted butter, melted
Instructions
- Preheat oven to 375°F (190°C). Grease or line a muffin tin with paper liners.
- In a large bowl, whisk together flour, baking powder, salt, ground cinnamon, and nutmeg.
- In another bowl, whisk together eggs, milk, sugar, melted butter, and vanilla extract until smooth.
- Combine wet and dry ingredients, stirring until just mixed. Do not overmix.
- Divide batter evenly into muffin cups, filling about 2/3 full.
- Bake 18–20 minutes, or until a toothpick inserted into the center comes out clean.
- Let muffins cool slightly. Brush tops with melted butter, then dip each muffin top into the cinnamon sugar mixture until coated.
- Serve warm and enjoy!

- Don’t overmix the batter for light, fluffy muffins.
- Add-ins like raisins, chopped nuts, or chocolate chips can be mixed into the batter.
