Ingredients
1/2 head green cabbage, thinly shredded
1/2 head purple cabbage, thinly shredded
2 large carrots, grated
1/2 red onion, thinly sliced
1 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon honey
Salt and pepper, to taste
6 slices bacon, cooked and crumbled
1/4 cup fresh parsley, chopped (optional, for garnish)
Instructions
In a large bowl, combine shredded green cabbage, purple cabbage, grated carrots, and thinly sliced red onion.
In a separate bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, honey, salt, and pepper until smooth and well combined.
Pour the dressing over the cabbage mixture and toss until evenly coated.
Add crumbled bacon to the coleslaw and toss again to distribute.
Cover and refrigerate for at least 1 hour to allow flavors to meld.
Before serving, garnish with chopped fresh parsley if desired.
