Ingredients
1 fresh pineapple, peeled, cored, and sliced into rings
1 cup shredded coconut
1/2 cup all-purpose flour
1/2 cup cornstarch
2 large eggs, beaten
1/2 cup milk
1/2 cup sugar
1/2 tsp salt
Oil for frying
Powdered sugar for dusting (optional)
Instructions
In a bowl, mix the flour, cornstarch, and salt.
In another bowl, whisk the eggs and milk together.
Place the shredded coconut in a third bowl.
Dip each pineapple ring into the flour mixture, then the egg mixture, and finally coat with shredded coconut.
Heat oil in a deep skillet over medium heat. Fry the pineapple rings until golden brown, about 2-3 minutes per side. Drain on paper towels.
Dust with powdered sugar if desired and serve immediately.
