For the cookies:

Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs and vanilla extract, beating well after each addition.
- In another bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually add dry ingredients to the wet mixture. Stir in oats until evenly combined.
- Drop tablespoon-sized dough portions onto prepared baking sheets, spacing 2 inches apart.
- Bake for 10–12 minutes, or until edges are golden brown. Cool on baking sheet for 5 minutes, then transfer to a wire rack.
- For the filling, beat softened butter until creamy. Add powdered sugar, vanilla, and heavy cream, beating until smooth and fluffy.
- Spread filling on the flat side of one cookie and sandwich with another. Repeat with remaining cookies.

- For best texture, use old-fashioned oats; instant oats will alter the consistency.
- Chill the dough before baking if you want thicker cookies.
