  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 large eggs, lightly beaten

Instructions

  1. Place grated zucchini in a colander and sprinkle with salt. Let sit for 10 minutes, then squeeze out excess moisture using hands or a clean towel.
  2. In a large bowl, combine zucchini, green onions, flour, Parmesan, mozzarella, baking powder, garlic powder, black pepper, and eggs. Mix well.
  3. Heat vegetable oil in a large skillet over medium heat.
  4. Drop spoonfuls of batter into the skillet and flatten gently with the back of a spoon.
