- 2 medium zucchini, grated
- 1 teaspoon salt
- 2 green onions, thinly sliced
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 2 large eggs, lightly beaten
- Vegetable oil, for frying
Instructions
- Place grated zucchini in a colander and sprinkle with salt. Let sit for 10 minutes, then squeeze out excess moisture using hands or a clean towel.
- In a large bowl, combine zucchini, green onions, flour, Parmesan, mozzarella, baking powder, garlic powder, black pepper, and eggs. Mix well.
- Heat vegetable oil in a large skillet over medium heat.
- Drop spoonfuls of batter into the skillet and flatten gently with the back of a spoon.
- Fry fritters for 2–3 minutes per side until golden and crispy.
- Transfer to paper towels to drain excess oil. Repeat with remaining mixture.
- Serve warm with your favorite dipping sauce.
Notes
- For extra flavor, add chopped fresh herbs like parsley or dill.
- Serve with sour cream, ranch, or a spicy yogurt dip.
- To lighten up, bake instead of fry at 400°F (200°C) for about 15–20 minutes, flipping halfway through.
