- 1 cup chicken broth
- 1/2 cup milk
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large bowl, combine the chicken, frozen vegetables, onion, celery, and potatoes.
- In another bowl, whisk together the cream of chicken soup, chicken broth, 1/2 cup milk, salt, pepper, thyme, and parsley. Pour this mixture over the chicken and vegetables and mix until evenly coated.
- Spread the mixture evenly in the prepared baking dish.
- To make the dumpling topping, whisk together flour, baking powder, and salt in a bowl. Stir in 1/2 cup milk and melted butter until a thick batter forms.
- Drop spoonfuls of the dumpling batter over the top of the casserole.
- Bake uncovered for 30–35 minutes, or until the dumplings are golden brown and the filling is bubbly.
- Let cool slightly before serving.

- Fresh vegetables can be used—just cook them slightly before adding.
- Use rotisserie chicken for convenience and extra flavor.
