Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, combine the chicken, frozen vegetables, onion, celery, and potatoes.
  3. In another bowl, whisk together the cream of chicken soup, chicken broth, 1/2 cup milk, salt, pepper, thyme, and parsley. Pour this mixture over the chicken and vegetables and mix until evenly coated.
  4. Spread the mixture evenly in the prepared baking dish.
  5. To make the dumpling topping, whisk together flour, baking powder, and salt in a bowl. Stir in 1/2 cup milk and melted butter until a thick batter forms.
