- Salt and pepper, to taste
- 1 onion, diced
- 2 bell peppers, diced (any color)
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 can (8 oz) tomato sauce
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large skillet, brown ground beef over medium-high heat. Season with salt and pepper. Drain excess fat.
- Add diced onion and bell peppers; cook until tender, about 5-7 minutes.
- Stir in minced garlic and cook for 1 minute.
- Add drained diced tomatoes and tomato sauce; stir to combine.
- Remove from heat and stir in cooked rice.
- Transfer mixture to the prepared baking dish; spread evenly.
- Top with shredded cheddar cheese.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for an additional 10 minutes, until cheese is melted and bubbly.
- Let cool for a few minutes; garnish with chopped parsley before serving.
