- 3 cups cake flour

- 6 large egg whites
Instructions
- Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- In a large bowl, cream together butter and sugar until light and fluffy.
- In a separate bowl, sift together cake flour, baking powder, and salt.
- Beat the dry ingredients into the butter mixture alternately with milk and vanilla, starting and ending with the flour mixture.
- In another bowl, beat egg whites until stiff peaks form. Gently fold into the batter.
- Divide the batter evenly among prepared pans and smooth the tops.
- Bake for 25–30 minutes or until a toothpick inserted into the center comes out clean.
- Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
