- 1 teaspoon vanilla extract

Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix together peanut butter, sugar, egg, vanilla extract, baking soda, and salt until smooth.
- Roll dough into 1-inch balls and place 2 inches apart on the baking sheet.
- Flatten each ball gently with a fork, making a crisscross pattern.
- Bake for 10–12 minutes until edges are lightly golden.
- Let cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Add 1/2 cup chocolate chips or chopped nuts for extra flavor and crunch.
- Use crunchy peanut butter for more texture if desired.
