Ingredients
4 medium sweet potatoes, peeled and cut into 1-inch cubes
2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, toss sweet potato cubes with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
Spread sweet potatoes in a single layer on the prepared baking sheet.
Roast in the preheated oven for 25-30 minutes, flipping halfway through, until sweet potatoes are tender and lightly caramelized.
Remove from oven and garnish with fresh parsley if desired before serving.
