Ingredients
– 2 boneless, skinless chicken breasts – Salt and pepper, to taste – 1 cup Greek yogurt – 1 cucumber, seeded and diced – 1 cup cherry tomatoes, halved – 1/2 red onion, thinly sliced – 2 cloves garlic, minced – 1 tbsp fresh dill, chopped – 1 tbsp fresh lemon juice – 1 tbsp olive oil – Salt and pepper, to taste – Fresh parsley, chopped (for garnish) – Pita bread or salad greens, for serving
Instructions
1. Season chicken breasts with salt and pepper. 2. Heat a grill pan or skillet over medium-high heat. Cook chicken breasts for 5-7 minutes per side, or until fully cooked and no longer pink in the center. Remove from heat and let rest before slicing. 3. In a medium bowl, combine Greek yogurt, diced cucumber, cherry tomatoes, red onion, minced garlic, fresh dill, lemon juice, and olive oil. Season with salt and pepper to taste. Mix well. 4. Slice grilled chicken breasts into strips. 5. Add sliced chicken to the tzatziki mixture and toss gently to coat. 6. Serve on a bed of salad greens or with pita bread. Garnish with chopped fresh parsley before serving.
Notes
You can make the tzatziki sauce a day in advance and store it in the refrigerator until ready to use.
