Ingredients

2 medium zucchinis, sliced into rounds (about 1/4 inch thick)

Olive oil, for brushing

Salt and pepper to taste

1/2 cup marinara sauce

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

Red pepper flakes for garnish (optional)

Fresh basil leaves for garnish (optional)


Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Arrange zucchini rounds in a single layer on the prepared baking sheet. Brush both sides of zucchini rounds with olive oil and season with salt and pepper.

Bake in the preheated oven for 5 minutes. Remove from oven and flip zucchini rounds over.

Spread marinara sauce evenly over each zucchini round.

Sprinkle shredded mozzarella cheese and grated Parmesan cheese over the marinara sauce.

Sprinkle dried oregano and dried basil evenly over the cheese.

Return to the oven and bake for an additional 5-7 minutes, or until cheese is melted and bubbly.

Remove from oven and let cool slightly before serving.

Garnish with red pepper flakes and fresh basil leaves if desired.
