- 4 large eggs
- 150g granulated sugar
- 100g all-purpose flour
- 1 tsp baking powder
- Zest of 1 lemon
- 1 tbsp lemon juice
- Powdered sugar, for dusting
For the filling:
- 200g cream cheese, softened
- 100g powdered sugar
- 1 tsp vanilla extract
- Zest of 1 lemon
- 240ml whipping cream
Instructions
- Preheat oven to 180°C (350°F). Grease and line a 10×15-inch baking tray with parchment paper.
- In a large bowl, beat eggs and sugar until pale and fluffy. Mix in lemon zest and juice.
- Sift in flour and baking powder. Gently fold until smooth.
- Spread batter evenly in the prepared tray and bake for 12-15 minutes, or until lightly golden.
- Dust a clean kitchen towel with powdered sugar. Once baked, invert the cake onto the towel and carefully peel off parchment. Roll the cake and towel together from the short end. Cool completely.
- For the filling, beat cream cheese until smooth. Add powdered sugar, vanilla, and lemon zest. Mix well.
- In another bowl, whip cream until stiff peaks form. Gently fold into the cream cheese mixture.
- Unroll the cooled cake. Spread the filling evenly over the surface and roll it back up without the towel.
- Wrap in plastic wrap and refrigerate for at least 1 hour. Dust with powdered sugar before serving.
Notes
- You can make this cake roll up to a day ahead; store it in the fridge wrapped tightly.
- Use a serrated knife to slice the roll cleanly.
- Add a bit of lemon curd to the filling for extra tang.
- Store leftovers in the refrigerator for up to 3 days.
