- For the cake:
- 1 cup shelled pistachios, finely ground
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- For the frosting:
- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 4 cups powdered sugar
- 1/2 cup shelled pistachios, chopped (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a bowl, mix finely ground pistachios, flour, baking powder, and salt; set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- Gradually add the flour mixture to the butter mixture, alternating with milk, mixing until just combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Let cool in pans for 10 minutes, then transfer to wire racks to cool completely.
- For the frosting, beat together the softened butter and cream cheese until smooth.
- Gradually add powdered sugar, beating until creamy and smooth.
- Once cakes are cooled, frost the top of one layer, then place the second layer on top and frost the top and sides.
- Sprinkle chopped pistachios over the frosted cake for garnish.
Notes
- For a deeper pistachio flavor, add a few drops of pistachio extract to the batter or frosting.
- Bring eggs and butter to room temperature before mixing for better texture.
- Store covered in the refrigerator and bring to room temperature before serving for best flavor.
