1/2 cup pumpkin puree

3 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

For rolling:

1/4 cup granulated sugar

1 tablespoon ground cinnamon


Instructions

Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.

Add pumpkin puree and vanilla extract, mix until well combined.

In another bowl, whisk together flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.

Gradually add dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

In a small bowl, mix together granulated sugar and ground cinnamon for rolling.

Shape dough into balls, about 1 tablespoon each. Roll each ball in the cinnamon-sugar mixture until coated.

Place cookies onto prepared baking sheets, spacing them about 2 inches apart.

Gently flatten each cookie ball with the bottom of a glass.

Bake for 10-12 minutes, or until cookies are set and lightly golden around the edges.

Remove from oven and let cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
