Ingredients
1 lb sirloin steak, about 1-inch thick
Salt and freshly ground black pepper
1 tablespoon olive oil
1/2 cup heavy cream
1/2 cup milk
1/2 cup Gorgonzola cheese, crumbled
1/4 cup grated Parmesan cheese
8 oz fettuccine pasta
Fresh parsley, chopped (for garnish)
Instructions
Season the steak generously with salt and pepper on both sides.
Heat olive oil in a skillet over medium-high heat. Add the steak and cook for about 4-5 minutes per side for medium-rare, or until desired doneness. Remove steak from skillet and let rest for 5 minutes before slicing thinly against the grain.
In the same skillet, reduce heat to medium and add heavy cream and milk. Stir gently, scraping up any browned bits from the bottom of the skillet.
Add Gorgonzola cheese and Parmesan cheese to the skillet, stirring until cheeses are melted and sauce is smooth and creamy. Season with salt and pepper to taste.
Meanwhile, cook fettuccine pasta according to package instructions until al dente. Drain and add cooked pasta to the skillet with the Gorgonzola sauce. Toss to coat evenly.
Serve the pasta topped with slices of steak. Garnish with chopped fresh parsley.
