Ingredients
1 lb ground beef
1 small onion, diced
1 packet taco seasoning
1 can (10 oz) diced tomatoes with green chilies
1 can (16 oz) refried beans
2 cups shredded cheddar cheese
4 cups tortilla chips, slightly crushed
1 cup sour cream
1/4 cup sliced black olives (optional)
1/4 cup chopped green onions
Fresh cilantro, chopped (for garnish)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft. Drain any excess fat.
Stir in the taco seasoning and diced tomatoes with green chilies. Simmer for 5 minutes.
Spread the refried beans evenly in the bottom of the prepared baking dish.
Layer half of the tortilla chips over the beans, followed by half of the beef mixture, and then half of the shredded cheese.
Repeat the layers with the remaining tortilla chips, beef mixture, and cheese.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool slightly. Top with sour cream, black olives, green onions, and fresh cilantro.
